2021 Fairbank Syrah

A milder vintage than those immediately preceding, 2021 produced generously ripe Syrah with individual parcels from our HOG and Rams Horn blocks exhibiting varying degrees of perfume and spice. Hand-picked and fermented in 5t open fermenters with 30% whole bunches included. Matured in French Oak barriques and puncheons for 10 Months, 15% new. Ruby purple in colour. The nose is deep and brooding with blackberry and plum fruits, a violet perfume and peppery spice layers. Medium to full bodied with Mulberry and black plum fruits, a generous mid palate supported by sweet new oak and dusty cocoa tannins leading to a long dry finish. A rich wine perfectly suited for immediate drinking or mid-term cellaring. Bottled February 2022.
